White Peach & Almond Tart

One of my favorite things to do after Ironman is to bake dessert again. And my family agrees. Tonight was a White Peach & Almond Tart. Last night I made the original Fig and Almond Tart with a recipe from Giada De Laurentiis. It was okay. Kids are fig fans, so today’s white peach one was much more appreciated. I used a frozen pie crust from Trader Joe’s, but honestly, it tastes as good as a home made one from scratch, without the extra work. The marscapone cheese and almond paste made the recipe authentic and fun. The apricot jam is a secret to the beautiful glazed look. The overflow of juice and filling actually make a yummy lacey cookie. Yum.
